Oh,we just love this time of year! The colors, the cool air, the State Fair and everything pumpkin. There is something about pumpkins and spice that just speaks to my soul. Here are some of my favorite, easy, pumpkin recipes that you and your family can try this fall. These recipes are also perfect for any of your plans for holiday catering in Raleigh this season. Mix the milk, pumpkin, egg, oil and vinegar together in a bowl. Then you’ll need to combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in a different bowl. Now, stir in the pumpkin mixture just enough to combine. Lightly oil your griddle, or frying pan, and heat over the medium setting. Pour your pancake batter onto the griddle. You’ll need to use about 1/4 cup of batter for each pancake. Brown the pancakes on both sides and be sure to serve them hot.

This batch makes 3 loafs in 7×3 pans. Before we get started you’ll need to preheat your oven to 350 degrees F. Now take your 3 pans and grease and flour them. In your large bowl, mix the pumpkin puree, eggs, oil, water and sugar together until all the ingredients are good and blended. In a separate, smaller bowl you’ll need to whisk the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger together until blended. Next, take the dry ingredients and stir them into the pumpkin mixture and blend. Pour this combined mixture into your three prepared pans. After your oven has preheated, you’ll need to bake the three pans for about 50 minutes total. Your loaves are done when you can stick a toothpick, or knife, in the center and it comes out clean.

First, you’ll need to preheat your oven to 425 degrees F. Next, in a large bowl whisk the pumpkin, spices and salt until smooth. Now, take a medium pan and heat up the pumpkin mixture over medium heat. This will meld the spices together nicely and the flavor will be fantastic. After heating the mixture, place back into the bowl and allow to cool. Once cooled, take the sweetened condensed milk and eggs and mix in. Pour this mixture into your pie crusts and bake for 15 minutes. Now, reduce your oven temperature to 350 degrees F and continue baking 35 to 40 minutes. You’ll know the pie is ready when you can insert a knife and retract it cleanly. Allow the pie to cool and garnish it as you wish. Serve warm or cold.
